a little pinspiration: potatoes & a nobel peace prize!

one reason you won't be reading
very much on
from my little pink couch
about my cooking ...

i always feel a little bit
like rachel & the failed english trifle.

i have like 4 things i'm really
comfortable cooking &
they are on constant rotation.

now, don't get me wrong ...
i can read directions off a box.
so, my family gets to enjoy taco tuesdays (out of the box)
& thanks to kraft's homestyle mac & cheese (in a box),
i can now fake a homemade mac & cheese complete with a yummy crust!

enter pinterest ....
my recipe board is the most
ignored board that i have.
i pin recipes with beautiful pictures
& have the best intentions of attempting them,
but i always fall back to the familiar rotation
{hum.... there's a sermon there, i think}.

anyway ...
i wanted to share something i
came across a couple of months ago
& y'all ... it is BRILLIANT!!!!
amy, from she wears many hats, has a friend
that gave her this genius tip about
making baked potatoes ....
 CUT THOSE SUCKERS IN HALF
BEFORE YOU COOK THEM!!!!
{yes, i am yelling}
i mean, hello!
what's the 1st thing we do before
we eat a baked potato?!?!?
we cut it in half!
so.... cut in half before ya cook it
& than you only have to cook it
for half the amount of time!!!!
i mean ...
whoever came up with this
needs a
nobel peace prize!
so simple, so brilliant!
drizzle pan with olive oil & sprinkle with salt
cut the potatoes in half (length-wise)
place potato cut side down
brush skins with olive oil  & sprinkle with salt
cook @ 400 degrees for about 35 minutes
DONE!
try it ... for reals!
super yummy!
